Salami with Barbera wine

This fully flavoured authentic and traditional salami is made following an ancient recipe handed down by our grandfather, who knew the exact amount of Barbera d’Asti required to enhance the mixture of raw salami and fresh garlic, prior to its proper curing.

Salami with Piedmontese Fassone

Cooked Salami

This is an old and traditional salami from Piedmont with peasant origins, which has been rediscovered for its surprisingly pleasant taste, round and aromatic. The cooked salami from Cascina Stella is made using cuts from the shoulder, the neck and cheeks of the pig which are mixed with wine and garlic. It is cooked carefully and gently and can even be served hot.

Salami Specialites

Lardo del Poggio

The pieces of lard are from selected pigs weighing over 170 kg., which are then cured for over two months in salt and pepper, which gives this fresh lard, consistency and fragrance.

Rolled Pancetta

Each pork pancetta is selected by Cascina Stella, then salt, pepper and a pinch of crushed garlic are massaged into the meat by hand which is then rolled up in compliance with the most rigorous tradition, giving our pancetta an intense flavour, just as our grandfather liked it.
